Hudson’s marks soft shell crab season with special menu

Hudson’s Seafood House On the Docks is planning a special menu to celebrate soft shell crab season, including seven new dishes like a soft shell crab po’boy and Buster Crab Béarnaise.

Hudson’s is the only restaurant in the area with an in-house shedding operation for soft shell crabs. Come spring, its packinghouse becomes a shedding box facility where the crabs begin their molting process in water-circulated tanks. Once the crabs have backed out of their shells, they are immediately removed and given to the chefs.
